Title: Críptidos: péptidos biológicamente activos derivados de proteínas alimentarias de interés para la salud

Abstract: Studies show that food proteins can be a natural reservoir of elements with biological activity called «cryptides», short sequences of amino acids that remain hidden and inactive in proteins until they are released with digestion and become biologically active fragments. Once absorbed, they perform different functions in the body including bioactivities such as antihypertensive, antioxidant, antimicrobial, opioid, antithrombotic, hypocholesterolemic, hypoglycemic, binding to minerals, among others. The interest in its study is due to the benefits for human health and possible applications in the therapeutic field, in functional foods or in food preservation. The objective of this review is to explore the current state of knowledge on food cryptides in the literature of the last decade. To know their distribution, functions, study models used in the investigations and information about the structure-activity relationship. According to this review, the results show that cryptides are quite ubiquitous elements with a surprising presence in different food matrices, both plant and animal origin. Among foods, milk turns out to be a particularly rich source of cryptides with different activities, especially of the antihypertensive type. Limited to this review, in vitro studies are the most used strategy to determine the functionality of cryptides, in vivo and in sílico studies are scarce and clinical studies absent. The abundance of cryptides in food matrices and the incredible number of bioactivities found, beyond the specific functionalities, leaves open to clarify or speculate on the important biological question underlying this strategy of nature.
