Abstract: It can be assured that microalgae are one of the most fashionable foods in recent times. Declared as a superfood and boasted for its high nutritional quality by both FAO and WHO. This is due to its nutritional richness, basing its composition on proteins, lipids, carbohydrates, vitamins, minerals and antioxidants. The percentages of its composition vary based on production factors, such as: water temperature, salinity, light, nutrient availability, production technology and the biological state of the crop, which can be used to extract them the most out of it. Microalgae are a highly researched product in recent decades, being a great ally both at a nutritional level for human beings and at an ecological level for the planet. It has been shown that its bioactive compounds have various benefits for human health, acting in favor of the immune system, due to its antioxidant and anti-inflammatory capacity, due to its activity against cancer and improving the cardiovascular system.
