Abstract: This project is the development of a business plan to study the viability of a restaurant that serves salads as the main product, using natural and organic products and with the highest quality, and taking into account The problems of existing intolerances and allergies, which are not few. But at the same time we will also focus on all those customers who want to maintain a healthy diet, people who take care of their food and do not want to give up eating at home. The analysis will be carried out through five major points, but before beginning the analysis there will be an introduction that will explain the main reasons that led to the development of this work, and in the end there will be some final conclusions, together with a personal assessment. In the first point we will analyze the company environment, using the Pestel model, such as Porter and the DAFO matrix, here we will analyze the sector, the competition, as well as the main economic situation in the country, etc. In the second point, we will define the business model that we want to develop, taking into account the CANVAS model, but also the mission, vision and objectives, as well as the main ethical responsibilities of the company. The third point will encompass the marketing plan, that is, those tools that the company will use to become acquainted with the sector. The fourth point, we will consider the plan of resources and operations, will enter within these group, all the needs of personnel, as well as the material needs, buildings, furniture, etc. And finally, the financial plan, which consists in the expression in figures of what is expected of the company, will be made a short and medium term forecast of what would be the expected evolution of the company.
