Abstract: Local gastronomy has always played a prominent role as a tourist attraction capable of transmitting an area's unique values, transforming the phenomenon of food tourism into a strategic element of tourism development. This research focuses on the management of food tourism through a proposal for a methodological model that facilitates its territorial analysis and contributes to the identification of the elements that determine its evolution. The general objectives of the research are, first, to delve into the relationship between tourism and gastronomy in order to identify the conditioning factors for its development, and second, to make a proposal for a methodological model that contributes to the efficient and sustainable management of the phenomenon, based on the territorial analysis of its current situation.
