Title: Al rescate de los sabores tradicionales: el Arca del gusto

Abstract: The Arca del gusto is an initiative of the slow food movement aimed at recognizing and ensuring the survival of certain foods considered threatened or in danger of extinction. In this work and through the study of two products included in this catalog, we wanted to reflect on the repercussion that this incorporation has had on the preservation and continuity of these foods, besides making a journey through the history of their production and consumption from their origins to our days.
