Abstract: Based on the recommendations of the WHO, Ecuador has implemented policies to improve its labeling system in processed foods such as the graphic system or nutritional semaphore, in order to combat the growth of the global obesity rate. This bibliographic review analyzes the regulations that regulate the labeling of processed foods in Ecuador, its implementation process and the impact on the purchasing and consumption practices of Ecuadorians. Furthermore, this work is focused on the detection of new improvement opportunities or future challenges that could arise from of the progress achieved so far. The methods included a deep review of laws, regulations, degree theses, market studies and press articles available in the different official pages, as well as articles related to the labeling in Ecuador. The results showed that consumers had a broad knowledge of the graphic system (semaphore), although this had no influence in relation to its use since it was largely determined by the level of education that established the change in consumption patterns. In conclusion, despite the impact on the change of habits has been partial, the traffic light has set an important precedent in the modification of purchase and healthy consumption patterns in Ecuador, although it must be accompanied by an appropriate training and the monitoring of consumers to achieve global state objectives.
