Title: Els cócs : Una senya d'identitat a la Terra Alta

Abstract: This is how I have organized this written assignment: I start with an overview of the social and economic environment of the region; I next mention briefly linguistic aspects of some terms; I continue with a brief review of culinary literature, mainly in Catalonia, and a brief historical description of it; I next deal with the world of bread and confectionery; and I end with the more ludic vision of pastries: that of eating them! The final part of the essay displays some of the most genuine pastry recipes from the Terra Alta, making sure that everything is neatly described thanks to the disinterested information provided by people I consulted with, and I compare these recipes with other more ancient ones found in medieval manuscripts. To close the dissertation, I show the conclusions that can be drawn from the pastries and other sweets from Terra Alta, basically linked to their origin and continuity to date.
