Abstract: There is an increasing interest in food, nutrition and health in general. It is undeniable that there is a clear relationship between food and health and our society is becoming aware of it. Increasingly scientific studies show the benefits that a diet rich in plant products has on health. Companies in the agri-food sector have echoed this interest and are offering products of exclusively vegetable origin. This work is a bibliographical review to analyze if possible the balance in a vegan diet and its possible repercussion in the health and the environment in order to have access to a vegan diet, avoiding the lack of nutrients.
