Abstract: | Goat's milk has special nutritional characteristics that make it a very complete natural food of the Mediterranean Diet, due to the high bioavailability of its macronutrients (fat, protein, carbohydrates) and micronutrients (minerals and vitamins) and by the important benefits on gastrointestinal, cardiovascular, bone, immune and antioxidant health, therefore, the habitual consumption of goat's milk and, above all, of fermented goat's milk is highly recommended. To carry out a bibliographic review based on the best scientific evidence available on the beneficial effects of goat's milk and, especially, of fermented goat's milk in the form of yogurt. In order to know the health benefits of milk and goat yogurt, a literature review was carried out and the results obtained from different studies in experimental animals were analyzed. In this way, it was determined that goat's milk offers a positive effect on mineral metabolism, bone mineralization, recovery of anemia and intestinal malabsorption syndrome. However, new studies will be necessary to confirm the positive effects described in humans. |
