Title: Papel de la histamina en la alimentación: revisión bibliográfica de las distintas patologías que puede ocasionar su exceso en el organismo

Abstract: In the recent years the awareness about food intolerance has increased. It is due to the emerge of symptomatology, it can be because we do not digest well or maybe because we do not metabolise or absorb some substances. One of this substances is histamine. It is a biogenic anime naturally present in a multitude of foods. Problem starts when we have an excess of it in our body, rather because we cannot metabolise it fine, due to the deficit of the enzyme in charge of the degradation (diamine oxidase or histamin-n-methyltransferase ), or because it exists an excessive intake of some nourishments that contain it. Then, the histamine is accumulated in plasma and can produce different symptomatology. There has to be mentioned that it does not exist an immediate relation between adverse reactions and the intake of food with histamine, except the case of an histamine intoxication.
