Abstract: The provision of food during major sports competitions, such as the Olympic Games (OG), is one of the key aspects to understand the history of sports nutrition and the nutritional strategies of athletes throughout history. Thus, the main objective of this research is to analyze the evolution and changes in the provision of food and gastronomy during the Summer Olympic Games (1896-2020), broadly analyzing the catering services of each edition. Therefore, this research has required reading a large number of reports on each edition of the Olympic Games (catering services, gastronomy, food safety...), as well as a bibliographic search on a topic that has not been the subject of extensive research, as is the case of the history of sports nutrition.
