Abstract: This work is a feasibility study of a restaurant specializing in healthy food called ECOGLUT where quality is the core business, emphasizing the organic and gluten-free food, and in general, a base of healthy eating. It is therefore both a restaurant geared to people with celiac disease diagnosis as well as other diagnoses that require feedings healthy. Likewise, the potential customer is in the broadest sense of the word, because today said that people increasingly care more about their food, regardless of whether or not to have health issues that compel certain eating behaviors.
